What is a Spanish Salad?

Spanish Salad (Ensalada Mixta) is a traditional salad made with a base of lettuce,tomatoes, onions, and olives, often topped with boiled eggs, tuna, and a generous drizzle of olive oil and vinegar It’s a celebration of Mediterranean flavors fresh, bright, and nourishing.

Ingredients

  • 1 head of romaine or iceberg lettuce,washed and chopped
  • 2 medium ripe tomatoes, sliced
  • 1 Cucumber, peeled (if the skin is bitter) and sliced
  • 1 small red onion, thinly sliced
  • 1/2 cup green or black olives
  • 2 hard-boiled eggs,sliced
  • 1 can of tuna in olive oil(drained)
  • 1 small red bell pepper, sliced (optional)
  • Salt and black pepper to taste

Directions

  • Wash and cut the lettuce, tomatoes, cucumber, bell pepper, and onion.
  • Layer the lettuce in a salad bowl. Top with tomatoes, cucumbers, onions, bell pepper, and olives.
  • Gently place slices of boiled egg and tuna on top of the salad.
  • Whisk together the olive oil, vinegar, mustard, salt, and pepper until well combined
  • Pour the dressing over the salad just before serving. Toss lightly if desired.
