Broccoli Kathi Roll Recipe is an easy-to-make dish that you can easily prepare for your friends and family, and mind you this doesn’t takes much time! The only time it takes to prepare is the filling, which is prepared using broccoli, red and yellow bell pepper, capsicum, potato, onion, tomato, and a melange of spices. This filling is rolled inside a warm chapati and then the roll is covered with a foil paper. This is done to hold the roll together and not let the filling come out!

Ingredients for Broccoli Kathi Roll

For the Filling:

  • 2 cups broccoli florets (steamed or boiled)
  • 1 tablespoon olive oil
  • 1 medium onion, finely slice
  • 1 bell pepper (red/green), finely slice
  • 1-2 green chilies, chopped (optional)
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 1 tablespoon lemon juice
  • Fresh coriander leaves, chopped
  • 1 tablespoon kasuri methi (dried fenugreek leaves) (optional)
  • 2 Potatoes

For the Paratha (or Wrap):

  • 2 cups whole wheat flour
  • 1 tablespoon oil
  • Salt to taste
  • Water (as needed)

For the Assembly:

  • 2-3 tablespoons green chutney (mint or coriander chutney)
  • 1 onion, thinly sliced (optional)
  • 1 cucumber, julienned (optional)

1: Make the Paratha (or Wrap)

  • In a mixing bowl, combine the whole wheat flour, salt, and oil. Gradually add water and knead the dough until it’s smooth and soft
  • Cover the dough with a damp cloth and let it rest for 15-20 minutes.
  • After resting, divide the dough into small balls and roll each ball into a flat, round paratha (like a thin tortilla).
  • Heat a tawa or skillet and cook the paratha on medium heat, flipping it over when light golden brown spots appear. Brush with a little oil on both sides. Set aside.

2: Prepare the Broccoli Filling

  • Heat oil in a pan, add the sliced onions, and sauté until they turn soft and golden brown.
  • Add the bell peppers and green chilies, and cook for another 2-3 minutes.
  • Add the ginger-garlic paste and sauté until fragrant.
  • Now, add the steamed broccoli, breaking it down into smaller pieces with the back of a spoon.
  • Sprinkle the cumin powder, coriander powder, red chili powder, turmeric powder, and salt.
  • Mix well.
  • Cook for 4-5 minutes, allowing the spices to blend in with the broccoli
  • Stir in the lemon juice, fresh coriander, and kasuri methi (if using). Cook for another minute, then remove from heat.
  • Finally, add mashed potatoes in the pan along with broccoli florets and stir fry for another 2 minutes. Garnish with coriander leaves and turn off the flame. The filling for kathi roll is ready.

3: Assemble the Kathi Roll

  • Lay the paratha flat on a clean surface.
  • Spread a little green chutney on the paratha.
  • Add a generous amount of the broccoli filling on top.
  • Optionally, top with sliced onions and cucumber
  • Roll up the paratha tightly to form a roll. You can wrap it in foil or parchment paper to keep it intact.

4: Serve

  • Serve your Broccoli Kathi Roll hot with extra green chutney or yogurt on the side.
