  • 4 ripe plantains
  • 8 large eggs
  • 1 big onion (sliced)
  • 8 pieces of Beef Sausages
  • ⅛ cup of Cooking cream (Optional)
  • 1 fresh pepper (optional, chopped)
  • 1/2 teaspoon seasoning powder or cube
  • 2 tablespoons vegetable oil
  • 1/4 cup chopped green bell pepper
  • 1/2 teaspoon black pepper(optional)
  • 1/2 cup chopped tomatoes
  • Salt to taste

Optional add-ins: corned beef, shredded chicken, or cheese.

Direction on preparation of  Plantain & Egg Frittata

  1. Peel the plantains and cut them into small cubes or slices, depending on your preference. I usually slice mine though .
  2. Heat vegetable oil in a frying pan over medium heat. Fry the plantain pieces until golden brown. Remove and place on a paper towel to absorb excess oil.
  3. In the same pan, reduce the oil if necessary. Add sliced onions and sauté until soft and fragrant. Add chopped pepper, tomatoes, suasage and bell peppers. Stir and cook for about 2–3 minutes.
  4. Crack the eggs into a bowl. Add cooking cream,salt, black pepper, and seasoning. Whisk until well combined.
  5. Set aside small portions of plantain,suasage and vegetables for toppings.
  6. Then add the fried plantains to the pan (deep or flat non-stick pan) with the vegetables. Gently mix, then pour the whisked eggs evenly over the mixture.
  7. Use the set aside portions for toppings to lay on the surface after pouring.

  8. Lower the heat, cover the pan, and allow it to cook slowly for 8–10 minutes until the eggs are set.Alternatively, pour the mixture into an oven-safe dish and bake at **180°C (350°F)** for 15–20 minutes.

  9. Once firm and lightly golden, remove from heat. Slice and serve warm.
